Weight Watchers Herbed Baked Potatoes

2 lbs small red potatoes, scrubbed and quartered
1 Tablespoon of olive oil
2 scallions, sliced
1 Tablespoon parsley, chopped
1 teaspoon chives, snipped
1/2 teaspoon of salt
1/8 teaspoon of pepper


Heat oven to 350°.
Spray pan with non-stick cooking spray.
Combine all ingredients, toss to coat.
Bake until tender-golden, about 1 hour.
