Fruit Parfaits


Granola:
½ cup butter
2 cups old fashioned oats
1 cup chopped almonds
½ cup brown sugar

Vanilla yogurt
Frozen fruit, thawed (can use fresh)
Sugar to sweeten


1. Granola: Melt butter on stovetop.

2. Add other “granola” ingredients.

3. Heat and stir until crispy, about 5 minutes.

4. On a wax paper lined cookie sheet spread thin layer of granola and cool.

5. Store in a tightly sealed container.

6. Parfaits: In a clear cup layer yogurt (¼ cup) and fruit (enough to see a decent layer on side of cup). Repeat until almost full.

7. Just before serving top with granola.

8. Keep refrigerated.


Yields: Depends on use

NOTES:
Make a cream cheese mixture instead of yogurt:
6 oz cream cheese
½ cup sugar
2 Tablespoons lemon juice
1 cup whipping cream

1. Whip cream. Chill.
2. Beat cream cheese, sugar and juice.
3. Fold in whipped cream. Chill.
4. Layer as you would above, replacing yogurt with cream mixture. Use a different variety of fruits and yogurts.
