Dad's Scones

Ingredients:

1 cup scalded milk (warmed to until small bubbles form around the edge. DO NOT BOIL!)
2 Tablespoons sugar
1 cup water
2 eggs
6 cups flour
¼ cup oil + Additional for frying
2 teaspoons salt
2 Tablespoons yeast

1. Preheat oven to 150 degrees. (This is to speed rising.)

2. Mix milk, oil, sugar and salt in food mixer.

3. Add water slowly, yeast, eggs, and flour.

4. Mix well and place in a greased (coat dish in cooking spray), oven-safe dish (usually glass). Place in oven for 15-20 minutes to rise.

5. While dough rises, during the last 5 minutes, heat oil on stove over low-medium heat.

6. Roll dough out to about 1/8 inch thick OR pull off pieces and flatten to desired size. (This will determine how many you make)

7. Cook in hot oil until golden about 1-3 minutes each side (make sure it cooks ALL THE WAY through). BE CAREFUL NOT TO SPLASH OIL!!! If it spits turn it down. Use tongs to flip and remove scones.

8. Drain on paper towels.

Makes 24 (4 inch scones), this can vary
* Top with powdered sugar, honey butter, jams or fruit.
* This recipe can be reworked if more time is available. Skip step 1, Follow steps 2&3, next place dough in a greased bowl, cover, place in the refrigerator for 2 hours or until doubled in size. Follow ste
